My Mom's Mickmack Recipe

Mom's Mickmack (mickmack means hodge podge or leftover dish)




1 cup leftover pasta or rice

1 cup leftover ground sausage or polska kielbasa

1 large onion, chopped

1 cup leftover beans - pinto or kidney (or one can of beans & juice)

1 cup diced tomatoes or tomato sauce

1 tablespoon chopped garlic

1/4 bell pepper, chopped

1/2 stalk celery, chopped

1/2 tsp. cayenne pepper (optional)

1 tsp. chopped fresh (if possible) parsley

salt and pepper



You can make this two ways. I made it this way. Saute sausage, onions, garlic, bell pepper, celery in olive oil until tender. Add all of the rest of the ingredients and cook on medium heat for 15 minutes - stirring often so it will not burn. Serve with parmesan on top.



Second way to make it...

You can also just put all of the ingredients in a casserole dish and bake in the oven for one hour at 350 degrees. I would check periodically to make sure it's not burning on top or bottom. I think cooking in a pan gives you more control.
